Trust me, this works. Get one jar of salsa (I prefer black bean & corn) and 4 FROZEN chicken breasts (must be frozen).
Dump the salsa and chicken in the crock pot. Turn it on low and let it cook while you're at work (about 8-9 hours or so). When you get home, shred the chicken, let simmer another 10 mins or so. You can then use the mixture to make chicken tacos, mix it with rice, put it in egg roll wrappers and make chicken egg rolls, etc.
